Zucchini oatmeal cookies with a cinnamon kick.
Ingredients:
  • 1.5 cups butter, softened
  • 1.5 cups white sugar
  • 3 eggs
  • 1.5 teaspoons vanilla extract
  • 4.5 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1.5 teaspoons baking soda
  • 1.5 teaspoons salt
  • 3 cups finely shredded zucchini
  • 3 cups quick-cooking oats
  • 2 cups chopped pecans
  • 1 (10 ounce) package cinnamon chips
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease the baking sheets.
  • Cream together butter and sugar in a large bowl until fluffy. Mix in eggs and vanilla extract until smooth.
  • Combine flour, cinnamon, baking soda, and salt in a bowl. Blend the flour mixture into the butter mixture gradually until well-combined. Mix in zucchini, oats, pecans, and cinnamon chips one by one, ensuring each addition is thoroughly incorporated. Spoon dough onto baking sheets, 2 inches apart, using a heaping tablespoon for each.
  • Bake until beautifully golden for about 12 minutes in a preheated oven, then cool on a wire rack.
