Elevate your breakfast with Instant Pot® zucchini oatmeal, flavored with cinnamon, nutmeg, and maple syrup.
Ingredients:
  • 1 tablespoon coconut oil
  • 1 cup steel cut oats
  • 2 cups water
  • 1 cup unsweetened almond milk
  • 2 cups grated zucchini
  • 2 teaspoons ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon kosher salt
  • 0.25 cup maple syrup
  • 2 teaspoons vanilla extract
  • 0.25 cup chopped walnuts
Instructions:
  • In a multi-functional pressure cooker (like Instant Pot®) on Saute mode, melt coconut oil and toast oats until lightly browned, about 2 to 3 minutes. Turn off Saute mode and add water, almond milk, zucchini, cinnamon, nutmeg, and salt. Gently stir.
  • Seal the lid securely. Choose high pressure based on manufacturer's guidelines and set the timer for 4 minutes. Let pressure build for 10 minutes.
  • Follow manufacturer's natural-release method for 10 minutes, then use quick-release method for 5 minutes. Unlock and remove the lid, then stir in maple syrup and vanilla extract.
  • Evenly distribute the oatmeal among 4 bowls and sprinkle each with 1 tablespoon of walnuts.
