Apple oatmeal muffins with fresh apples, oats, and applesauce, topped with a buttery cinnamon streusel - a delicious, quick breakfast treat.
Ingredients:
  • 0.25 cup quick-cooking oats
  • 1 tablespoon brown sugar
  • 1 tablespoon melted butter
  • 0.25 teaspoon ground cinnamon
  • 1.5 cups quick-cooking oats
  • 1.5 cups all-purpose flour
  • 0.5 cup brown sugar
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 cup unsweetened applesauce
  • 0.5 cup milk
  • 0.25 cup vegetable oil
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 apple - peeled, cored, and chopped
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C), and prepare a 12-cup muffin pan by greasing it or lining it with paper liners.
  • Prepare the topping by combining oats, brown sugar, melted butter, and cinnamon in a small bowl; set it aside.
  • Combine oats, flour, brown sugar, cinnamon, baking powder, baking soda, and salt in a large bowl. In a separate bowl, whisk together applesauce, milk, oil, egg, and vanilla extract. Gently stir the applesauce mixture into the flour mixture until everything is well combined. Fold in chopped apple.
  • Fill the prepared muffin cups 2/3 full with batter, then generously sprinkle each muffin with the oat topping mixture.
  • Bake until a toothpick inserted in the center comes out clean, around 15 minutes in the preheated oven.
