Oatmeal Apple Muffins

Antioxidant-rich apple, cranberry, and nut muffins with fiber-filled oats and blood sugar-regulating cinnamon for a heart-healthy treat.
Ingredients:
  • 0.75 cup fat free half-and-half
  • 3 tablespoons canola or olive oil
  • 0.33333331346512 cup Splenda or sugar
  • 1 medium apple, peeled and chopped
  • 0.75 cup dried cranberries or raisins
  • 0.5 cup walnut pieces
  • 1 cup whole wheat flour
  • 1 cup quick-cooking oats
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
Instructions:
  • Preheat your oven to 450°F.
  • Whisk egg, half-and-half, oil, and Splenda (or sugar) in a bowl. Combine remaining ingredients in a large bowl. Gently fold in the egg mixture until just moistened.
  • Fill non-stick muffin tins three-quarters full and bake for 15 to 20 minutes until golden brown.
