Soft and chewy oatmeal cookie base with mini apple pie tarts and sweet caramel drizzle for a crowd-pleasing treat.
Ingredients:
  • 1 cup unsalted butter, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon apple pie spice
  • 3 cups quick-cooking oats
  • 0.5 cup chopped walnuts
  • 2 large apples - peeled, cored, and diced
  • 1 tablespoon unsalted butter
  • 1 tablespoon white sugar
  • 2 large egg whites
  • 0.25 cup caramel sundae syrup (such as Smucker's®)
  • 1 teaspoon cream of tartar
  • 2 cups powdered sugar, or more to taste
  • 1 tablespoon milk, or more as needed
Instructions:
  • Cream together butter, sugar, and brown sugar in a bowl using an electric mixer until creamy. Mix in eggs and vanilla extract.
  • In a separate bowl, mix together flour, salt, baking soda, cinnamon, and apple pie spice. Gradually blend this into the wet ingredients until fully mixed. Stir in oats and walnuts. Cover the mixture and chill in the refrigerator for at least 1 hour.
  • Preheat the oven to a toasty 375 degrees F (190 degrees C), then get your two 24-cup mini muffin tins ready and place paper towels under 2 wire racks.
  • In a microwave-safe bowl, mix apples, butter, sugar, and cinnamon. Microwave on high for 3 minutes, stirring halfway through, until apples are soft. Drain and let cool in a strainer.
  • Form walnut-sized dough balls from the chilled dough. Place one ball in each muffin cup and gently press to slightly flatten.
  • Bake in the preheated oven for 10 minutes. Let cool for 2 minutes. Gently press a shot glass into the center of each cookie to create a cup shape. Transfer cookies to wire racks to finish cooling.
  • Evenly distribute the apple filling into the center of each cookie to ensure they are all fully filled.
  • In a glass, metal, or ceramic bowl, beat foamy egg whites for icing. Stir in caramel syrup, cinnamon, and cream of tartar. Gradually add 2 cups of powdered sugar until it reaches a drizzling consistency like the caramel syrup. Adjust with more powdered sugar if needed to prevent it from running too thin.
  • Drizzle the icing over the cookies, allowing it to blend with the apple filling as it melts.
  • Indulge in these treats when they are at their peak freshness or savor them later once the icing has set, approximately 3 hours.
