Cozy up with a delicious baked oatmeal that tastes like apple pie for breakfast.
Ingredients:
  • 2.5 cups uncooked rolled oats
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground allspice
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground cardamom
  • 1 cup chopped toasted pecans, divided
  • 1 teaspoon baking powder
  • 0.75 teaspoon kosher salt
  • 5 tablespoons unsalted butter, divided
  • 0.5 cup brown sugar, divided
  • 2 cups whole milk
  • 1 large egg, lightly beaten
  • 1 tablespoon vanilla extract
  • 2 large Honeycrisp apples, peeled and diced, divided
  • 2 tablespoons maple syrup
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and lightly grease an 11x7-inch baking dish with baking spray.
  • In a large skillet over medium heat, toast oats until golden and fragrant, about 4 minutes. Add cinnamon, ginger, allspice, nutmeg, and cardamom; toast for another 1 to 2 minutes, stirring occasionally. Transfer to a medium mixing bowl and allow to cool slightly.
  • Stir in 3/4 cup pecans, baking powder, and salt into the oat mixture until well combined.
  • Melt 3 tablespoons of butter in a large microwave-safe bowl until smooth. Whisk in 6 tablespoons of brown sugar until fully incorporated. Add milk, egg, and vanilla, and whisk until smooth. Mix in the oats evenly before gently folding in half of the apple pieces. Transfer the mixture to the prepared pan.
  • Bake until beautifully golden brown and fully set, about 35-40 minutes in the preheated oven.
  • Once the oatmeal is in the oven, combine the rest of the butter and apple pieces in a nonstick skillet over medium heat. Pour in the remaining brown sugar and maple syrup. Stir frequently and cook until the apples are softened and the liquid forms into a syrupy consistency, which should take around 8 to 10 minutes.
  • Top the baked oatmeal with the apple mixture once it's out of the oven, then scatter the remaining pecans over it.
