Wholesome oatmeal apple walnut muffins - perfect for breakfast or snack on the run!
Ingredients:
  • 1 cup whole oats
  • 1 cup oat flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon allspice
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 large apples - peeled, cored, and chopped
  • 0.75 cup plain yogurt
  • 2 eggs
  • 0.5 cup brown sugar
  • 0.25 cup butter, melted
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare your muffin tin by greasing it generously or lining it with paper liners.
  • In a large bowl, mix oats, oat flour, cinnamon, allspice, baking soda, and salt. Stir in apples, yogurt, eggs, brown sugar, butter, and vanilla until well combined. Gently fold in walnuts. Fill muffin cups with batter.
  • Bake until a toothpick inserted in the center comes out clean, approximately 25 minutes in the preheated oven.
