Bake a delicious combo of apples, pecans, cinnamon, and nutmeg with oats for easy and nutritious oatmeal muffin cups.
Ingredients:
  • 1.5 cups almond milk
  • 1 cup applesauce
  • 1 apple, diced
  • 0.5 cup pecans
  • 0.5 cup flax seed meal
  • 1.5 teaspoons ground nutmeg
  • 2.5 cups old-fashioned rolled oats
Instructions:
  • Preheat the oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.
  • Combine almond milk, applesauce, diced apple, raisins, pecans, flax meal, eggs, brown sugar, cinnamon, and nutmeg in a bowl. Stir in oats until fully incorporated. Allow mixture to rest for 5 minutes. Use an ice cream scoop to fill the muffin cups with the mixture.
  • Bake in the oven until lightly browned, approximately 20 minutes. Allow the oatmeal to rest in the muffin tin for 5 minutes before moving to a wire rack to cool.
