Spiced honey roast pork with apple & mustard salad

"Delicious apple salad perfectly complements honey mustard pork."
Ingredients:
  • 28.60 gm honey
  • 1/2 tsp mustard powder
  • 1.25 gm ground ginger
  • 1 tsp ground coriander
  • 300g piece pork fillet
  • 1 small Granny Smith apple
  • 21.00 gm lemon juice
  • 2 witlof, thinly sliced
  • 62.50 ml roughly chopped flat-leaf parsley leaves
  • 5.90 gm wholegrain mustard
  • 39.60 gm whole-egg mayonnaise
Instructions:
  • Preheat your oven to 220C and prepare a baking tray with parchment paper.
  • Prepare the apple by coring and thinly slicing it. Cut the slices into matchsticks and toss in a bowl with lemon juice. Add witlof and chopped parsley, cover, and chill until ready to serve.
  • Mix together the honey, mustard powder, ginger, coriander, and 2 teaspoons of sea salt in a small bowl. Spread this mixture over the pork fillet on the tray. Roast for 16-18 minutes until the pork is golden brown all over. Rest the pork, covered loosely with foil, for 10 minutes after removing it from the oven.
  • Combine the wholegrain mustard and mayonnaise with the salad, mix well, and season with sea salt and freshly ground black pepper to taste.
  • Arrange the salad on serving plates and layer with slices of pork on top.
