Roasted spiced carrots

Middle Eastern spiced baked carrots.
Ingredients:
  • 1kg carrots, peeled
  • 25g (1/4 cup) flaked almonds
  • 21.00 gm fresh lemon juice
  • 14.40 gm honey
  • Pinch of dried chilli flakes
  • Pinch of ground cinnamon
  • Pinch of ground cumin
  • 45g (1/4 cup) currants
  • Fresh coriander sprigs, to serve
Instructions:
  • Preheat your oven to 200°C. Cut carrots into 8cm lengths after quartering them lengthways. Arrange them in a large baking dish and drizzle with half of the oil. Bake for 30 minutes until carrots are golden and tender. Sprinkle almonds on top and bake for an additional 5 minutes until almonds are lightly toasted.
  • In a small microwave-safe bowl, combine lemon juice, honey, chili flakes, cinnamon, cumin, and remaining oil. Microwave on High for 10 seconds, or until the honey melts. Stir well.
  • Spread the carrot mixture on a platter. Sprinkle currants and dressing on top. Season with salt and pepper, then mix well. Garnish with fresh coriander.
