Spiced roasted baby carrots

"Sweet roasted carrots, the perfect side for any roast."
Ingredients:
  • 2 bunches Dutch carrots, trimmed, scrubbed
  • 2 bunches purple Dutch carrots, trimmed, scrubbed
  • 36.40 gm olive oil
  • 54.00 gm maple syrup
  • 2 garlic cloves, thinly sliced
  • 2cm piece fresh ginger, peeled, cut into thin matchsticks
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 62.50 ml dried cranberries
  • Fresh coriander sprigs, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Place carrots in a roasting pan and generously drizzle with oil and maple syrup. Add garlic, ginger, cumin, and ground coriander, then toss everything together to ensure the carrots are evenly coated.
  • Roast for 30 to 35 minutes, rotating once, until carrots are golden and tender. Mix in cranberries. Toss gently. Season with salt and pepper. Serve carrots topped with coriander.
