Spiced roasted baby parsnips

Create zesty parsnip chips for a delicious snack or side dish.
Ingredients:
  • 28.60 gm honey
  • 18.20 gm extra virgin olive oil
  • 2.50 gm smoked paprika
  • 1 tsp ground coriander
  • 1.25 gm ground cumin
  • 6 baby parsnips, peeled, quartered lengthways
  • Micro herbs, to serve (optional)
Instructions:
  • Preheat the oven to 220C (200C fan forced) and prepare a baking tray lined with baking paper.
  • In a bowl, mix together honey, oil, paprika, coriander, and cumin. Toss the parsnips in the mixture until coated. Spread them on a baking tray and roast for 25 minutes until golden and cooked through. Enjoy!
