Fire-roasted baby wheat cooked with flavorful spices and tomato for a savory Middle Eastern delicacy.
Ingredients:
  • 1 cup freekeh
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 0.5 teaspoon paprika
  • 0.25 teaspoon cumin
  • 0.25 teaspoon ground turmeric
Instructions:
  • After giving the freekeh a good rinse, soak it in a bowl filled with enough water to cover for 10 minutes before draining it.
  • Combine vegetable broth, water, and olive oil in a large pot and bring to a boil. Add freekeh, tomato paste, paprika, cumin, turmeric, salt, and black pepper to the pot and bring to a boil.
  • Simmer the freekeh mixture on medium-low heat, stirring occasionally, until most of the liquid is absorbed, for about 1 hour. Remove from heat and allow to rest for 5 minutes. Fluff with a fork before serving.
