Ingredients:
  • 8 (about 150g each) ripe tomatoes
  • 500g fresh ricotta
  • 85g (1/3 cup) black olive paste
  • Salt & ground black pepper
  • 1 bunch mizuna, ends trimmed, washed, dried
  • 80ml (1/3 cup) olive oil
  • 125.00 ml tightly packed fresh basil leaves
  • 30.00 ml red wine vinegar
  • 21.60 gm honey
  • 1 garlic clove, chopped
Instructions:
  • Score a shallow cross on the base of each tomato using a small, sharp knife. Then, place the tomatoes in a large heatproof bowl and cover them with boiling water. Let them sit for 1 minute. Drain the tomatoes and cool them in a bowl of cold water. Once they are cool, peel off the skins carefully. Place them on a large plate and set aside.
  • Combine ricotta, olive paste, salt, and pepper in a medium bowl, using a fork to mix until well blended.
  • Prepare the fragrant basil dressing by blending oil, fresh basil leaves, vinegar, honey, garlic, salt, and pepper until velvety. Pour the mixture into a small bowl and keep it ready for use.
  • Divide mizuna leaves among plates, top with tomato slices, layer with ricotta mixture, and finish with remaining tomato slices. Drizzle with basil dressing and serve.
