Transform Coles deli flatbreads into crispy golden zucchini and ham lunchbox roll-ups. Perfect for picky eaters, easily customizable with various proteins, and freezer-friendly for a quick meal prep. Try our popular zucchini slice variations like muffins and 3-cheese tomato for a delicious twist.
Ingredients:
  • 1 large zucchini
  • 2 flatbreads
  • 6 large slices double-smoked ham, 2 halved
  • 80g (2/3 cup) grated pizza cheese
  • 2 green shallots, sliced
  • 125ml (1/2 cup) milk
Instructions:
  • Preheat the oven to 200C (180C fan forced) and grease a 12-hole 80ml (1/3 cup) muffin tin.
  • Trim off ends of zucchini and discard. Use a vegetable peeler to create zucchini strips.
  • Lay 1 flatbread on a board and layer with half of the ham and zucchini, ensuring the ham is completely covered with strips of zucchini. Sprinkle half of the cheese and shallot on top. Roll up the flatbread to seal the filling, trim the ends, and cut the roll into 6 even pieces. Place the slices, cut side up, in muffin holes. Repeat the process for the remaining flatbread and filling.
  • Combine eggs and milk in a jug, season, then pour over rolls in the pan filling the holes halfway. Bake for 20 minutes until golden and set.
