Zucchini slice frittata

Whip up this quick and delicious cheesy bake in no time!
Ingredients:
  • 1 brown onion, finely chopped
  • 100g rindless smoked bacon
  • 6 eggs
  • 150g (1 cup) plain flour
  • 4.00 gm baking powder
  • 36.40 gm extra virgin olive oil
  • 500g zucchini, trimmed, coarsely grated
  • 100g (1 cup) kasseri cheese, coarsely grated (see note)
  • 2 tsp fresh dill, chopped
  • Dill sprigs, extra, to serve
Instructions:
  • Preheat your oven to 180C/160C fan forced, and generously spray a 20cm ovenproof frying pan with oil.
  • Sauté onion and bacon in a non-stick pan over high heat, stirring frequently, until crisp, about 5 minutes. Allow to cool slightly before proceeding.
  • In a large bowl, vigorously whisk the eggs until frothy. Incorporate the flour, baking powder, and olive oil until a smooth batter forms. Gently fold in the bacon mixture, zucchini, cheese, and dill. Season the mixture. Transfer the batter to a prepared pan and bake for 50 minutes or until golden and fully cooked. Garnish with additional dill before serving.
