Upgrade your lunch with a delicious broccoli, bacon, and zucchini slice - a lunch box hit!
Ingredients:
  • 113.75 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 4 rashers middle bacon, trimmed, chopped
  • 1 large head broccoli, cut into florets
  • 125.00 ml fresh basil leaves, torn
  • 3 zucchini, grated
  • 500.00 ml grated tasty cheese
  • 225.00 gm self-raising flour
  • 8 eggs
  • 128.75 gm milk
  • 100g fetta, crumbled
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 20cm x 26cm enamel roasting pan that is 5.5cm deep, making sure to line the base and sides with baking paper, allowing for a 2cm overhang above the edges of the pan.
  • In a large frying pan over medium-high heat, heat 2 teaspoons of oil. Saute onion and bacon, stirring occasionally, for 5 minutes until onion softens. Toss in broccoli and cook for 2 more minutes. Stir in garlic and cook for another minute until fragrant. Remove from heat and let cool.
  • In a large bowl, combine the bacon mixture with basil, zucchini, 1 1/2 cups tasty cheese, and flour. Stir well to combine.
  • In a bowl, whisk together eggs, remaining oil, and milk. Combine with vegetable mixture and mix well. Season with salt and pepper, then stir in fetta. Transfer mixture to prepared pan and sprinkle with remaining tasty cheese. Bake for 40 minutes until the top is golden and the mixture is firm. Let it stand for 15 minutes before serving warm or cold.
