Super greens frittata slice recipe

Egg, greens, cheese, and garlic slice: a delicious, healthy, gluten-free meal option.
Ingredients:
  • 300g broccoli, cut into small florets
  • 18.20 gm extra virgin olive oil
  • 2 zucchini, finely grated
  • 4 green shallots, thinly sliced
  • 150g baby spinach
  • 8 eggs
  • 125g (1/2 cup) cottage cheese
  • 60ml (1/4 cup) unsweetened almond or skim milk
  • 250g cherry tomatoes, halved
Instructions:
  • Preheat the oven to 180°C/160°C fan forced, then line a 16 x 26cm slice pan with baking paper on the base and sides.
  • Steam the broccoli in a basket over boiling water for 2 minutes until crisp-tender. Drain and cool slightly.
  • Heat oil in a large non-stick frying pan over medium heat. Sauté zucchini, shallot, and garlic until softened, about 3-4 minutes. Add half the spinach and stir until just wilted. Transfer the mixture to a bowl to cool.
  • In a large bowl, mix eggs, cottage cheese, and milk until smooth. Add zucchini and broccoli, then season to taste.
  • Spread mixture into the prepared pan and lay half of the tomato slices on top, cut side facing up. Bake for 25 minutes, or until golden brown. Serve with the remaining spinach and tomato on the side.
