Super greens vegetable fried rice

Veggie-packed fried rice: a quick and healthy mid-week favorite.
Ingredients:
  • 300.00 gm medium-grain brown rice
  • 3 green onions
  • 2 tsp vegetable stock powder
  • 84.15 gm vegetable liquid stock
  • 42.00 gm salt-reduced soy sauce
  • 40.00 ml kecap manis
  • 18.20 gm peanut oil
  • 3 tsp finely grated fresh ginger
  • 3 garlic cloves, sliced
  • 1 bunch asparagus, trimmed
  • 1 bunch broccolini, trimmed
  • 1 bunch gai lan, trimmed
  • 4 kale stems, centre vein discarded, leaves chopped
  • 2 long red chillies, thinly sliced diagonally
  • 3.00 gm sesame seeds, toasted
Instructions:
  • Prepare the rice according to package instructions, then spread it out onto a large tray to cool for 20 minutes.
  • Prepare the onions by separating the white and pale green sections from the dark green sections. Cut the white and pale green sections into 5cm lengths and set aside. Julienne the dark green sections into matchsticks and place them in a bowl of iced water. In a separate jug, combine the stock powder, liquid stock, sauce, and kecap manis. Set aside for later use.
  • Heat a wok or large frying pan on medium-high heat. Add oil and swirl to coat. Add onion, ginger, and garlic, stir-fry for 30 seconds. Add asparagus, broccolini, gai lan, kale, and 1 tablespoon water. Stir-fry for 5 minutes until veggies are tender.
  • Stir in the rice and sauce blend, stir-fry until warmed for about 2 minutes.
  • Drain the green onion and use it to top the fried rice along with chili and sesame seeds before serving.
