Elevate veggies with effortless clementine-chilli-thyme infused butter for bold flavor. Get creative with your own unique combinations.
Ingredients:
  • 400 g Brussels sprouts
  • 400 g Tenderstem broccoli
  • 300 g frozen peas
  • 100 g soft unsalted butter
  • 1 teaspoon sea salt
  • ½ a lemon
  • ½ a clementine
  • ¼ of a fresh red chilli
  • 1 handful of thyme sprigs
Instructions:
  • Start by mashing the butter with a fork. Sprinkle 1 teaspoon of sea salt, then finely grate the zest of one lemon and one clementine over the butter. Next, finely chop the chili, add the thyme leaves, and mash everything together. For steaming, fill a pan with salted water, bring it to a boil, then add the sprouts. Place the broccoli in a steamer basket followed by the peas in another basket. Cover and cook for 5 minutes. If you don't have a steamer, add the broccoli to the sprouts after 2 minutes, then the peas for the final 2 minutes. Once cooked, drain the vegetables and transfer them to a large serving bowl. Top with the flavored butter, allowing it to melt over the vegetables. Give everything a good toss before serving.
