Wholesome and convenient breakfast recipe with nuts, seeds, oats, and fruit. No added sugar, high in nutrients. Make ahead for a quick and satisfying morning meal.
Ingredients:
  • 1 kg porridge oats
  • 250 g unsalted mixed nuts such as walnuts, Brazils, hazelnuts, pecans, pistachios, cashews
  • 100 g mixed seeds such as chia, poppy, sunflower, sesame, linseed, pumpkin
  • 250 g mixed dried fruit such as blueberries, cranberries, sour cherries, mango, apricots, figs, sultanas
  • 3 tablespoons quality cocoa powder
  • 1 tablespoon freshly ground coffee
  • 1 large orange
Instructions:
  • - Preheat the oven to 180°C/350°F/gas 4. - In your largest roasting tray, combine oats, nuts, and seeds. - Roast for 15 minutes, stirring halfway. - Add dried fruit, cocoa, coffee, and finely grated orange zest to the mix. - Pulse mixture in batches in a food processor until a rough powder forms. - Transfer to a large airtight jar for storage. - To serve, use 50g of granola dust per person with milk or yogurt and fresh fruit. - For porridge, mix 50g of granola dust with 200ml of milk, then top with fruit. - For a smoothie, blend 50g of granola dust with milk, banana, and frozen raspberries. - For pancakes, combine 2 heaped tablespoons of granola dust with flour, banana, and egg. - For a hot drink, heat 25g of granola dust with milk to your desired consistency.
