Decadent and healthy carrot muffins, perfect for snacking or a treat with frosting!
Ingredients:
  • 1 cup raisins
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons baking soda
  • 1 cup vegetable oil
  • 0.75 cup brown sugar
  • 4 large eggs
  • 3 cups shredded carrots
Instructions:
  • In a small bowl, immerse the raisins in 2 cups of water and let sit for 15 minutes. Discard water and keep raisins aside.
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare 18 standard muffin cups with paper liners.
  • Combine flour, baking powder, baking soda, salt, and cinnamon, sifting them together in a bowl.
  • Using an electric mixer, blend oil, brown sugar, and eggs in a large bowl until fully incorporated. Slowly add the flour mixture, then gently fold in the carrots and drained raisins. Fill the prepared muffin cups with the batter.
  • Bake in the preheated oven for 20-30 minutes until tops spring back when lightly pressed. Let cool in the tins for 5 minutes, then transfer to a wire rack to cool completely.
