Award-winning zucchini muffins combining nutrition, flavor, and texture.
Ingredients:
  • 2.25 cups all-purpose flour
  • 1 cup white sugar
  • 2.5 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup shortening
  • 1.5 cups shredded zucchini
  • 0.25 cup sour milk
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped walnuts
  • 0.25 cup brown sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin pan by greasing and flouring it or lining it with paper liners.
  • In a large bowl, mix together flour and sugar. Add baking powder, cinnamon, nutmeg, baking soda, and salt. Cut in shortening until mixture looks like coarse crumbs. Create a well in the middle and add zucchini, milk, eggs, and vanilla. Stir until combined, then gently add walnuts. Fill muffin cups 2/3 to 3/4 full with batter. Sprinkle tops with brown sugar before baking.
  • Bake in the oven until a toothpick comes out clean, around 15 to 20 minutes. Then, let it cool.
