Super-speedy steamed salmon

Quick and easy one-pan salmon dish packed with heart-healthy omega-3 fatty acids.
Ingredients:
  • 2 red onions
  • 1 red pepper
  • ½ a bunch of basil
  • 1 tesapoon fennel seeds
  • 1 bay leaf
  • 300 g couscous
  • 200 g cherry tomatoes
  • 4 x 100 g salmon fillets, skin on, scaled, pin-boned, from sustainable sources
  • extra virgin olive oil
  • 1 lemon
  • 4 tablespoons natural yoghurt
Instructions:
  • Prepare the vegetables by peeling and chopping the onions, pepper, and chilli. Chop the basil leaves and stalks. Heat olive oil in a large frying pan, then cook the vegetables with basil stalks for 5 minutes until soft. Crush fennel seeds and add to the pan with a bay leaf. In a bowl, season couscous with salt and add boiling water. Mix in halved cherry tomatoes with the veg in the pan. Drizzle salmon with olive oil, season, and place skin-side down on couscous. Add lemon zest and juice. Cover and cook for 12-15 minutes until couscous is fluffy and salmon is cooked. Top with yoghurt, olive oil, basil leaves, salt, and pepper. Serve and enjoy.
