Indulge in a simple and tasty prawn pasta dish.
Ingredients:
  • 500g dried Italian Spaghetti
  • 40g butter, chopped
  • 4 garlic cloves, sliced
  • 2 leeks, trimmed, sliced
  • 125.00 gm dry white wine
  • 400g peeled raw prawns, tails intact
  • 2 bunches asparagus, trimmed, halved crossways and lengthways
  • 300ml thickened cream
  • 125.00 ml grated parmesan
  • 40.00 ml chopped fresh tarragon, plus extra to serve
  • 1 zucchini, cut into ribbons
  • 125.00 ml frozen peas
Instructions:
  • Boil pasta in a large pot of salted water until perfectly cooked. Save 1/3 cup of the cooking liquid before draining.
  • In a large deep frying pan over medium heat, melt butter until sizzling. Sauté leek and garlic until leek is soft, about 3 minutes. Pour in wine and cook until almost all the liquid is gone, approximately 3 minutes.
  • Add plump prawns and vibrant asparagus to the pan. Cook for 2 minutes or until prawns blush pink. Pour in cream and the fragrant reserved cooking liquid. Bring to a gentle simmer. Fold in rich parmesan and fragrant tarragon. Stir until velvety. Season generously. Toss in pasta, fresh zucchini, and sweet peas. Stir until peas are tender.
  • Garnish generously with fresh tarragon and present.
