Spicy Cajun shrimp over creamy fettuccine Alfredo, perfect for a speedy solo supper.
Ingredients:
  • 2 ounces dry fettuccine pasta
  • 1.5 teaspoons all-purpose flour
  • 0.75 teaspoon salt-free Cajun seasoning
  • 5 ounces large shrimp, peeled and deveined
  • 2 teaspoons unsalted butter
  • 0.5 teaspoon olive oil
  • 1 teaspoon finely grated garlic
  • 0.25 cup unsalted chicken stock
  • 0.125 teaspoon white pepper
  • 1 pinch red pepper flakes
  • 3 tablespoons freshly grated Parmesan cheese
  • 0.25 cup light whipping cream (18%)
  • 1 teaspoon chopped fresh parsley
Instructions:
  • 1. Boil a large pot of lightly salted water until it's bubbling enthusiastically. Add fettuccine and cook until it's tender but still has a slight bite, about 7 to 8 minutes. Set aside 1/4 cup of the cooking water, then drain the rest.
  • Mix together the flour and Cajun seasoning in a small bowl. Gently dry the shrimp and then add them to the bowl, ensuring they are evenly coated.
  • In a skillet over medium-high heat, melt butter with olive oil until bubbling. Cook shrimp for 2 minutes on each side. Transfer shrimp to a bowl. In the same skillet, cook garlic until fragrant for about 30 seconds. Add chicken broth and deglaze the pan.
  • Gradually incorporate the remaining flour and Cajun seasoning while whisking until blended. Season with white pepper and red pepper flakes. Lower the heat to medium-low and slowly pour in the cream; cook for 2 minutes. Slowly sprinkle in the Parmesan cheese while whisking constantly. Cook until the sauce thickens, about 2 minutes. Add the shrimp back to the skillet and mix in the pasta until well combined.
  • Thin the sauce with a splash of reserved cooking water, adding a tablespoon at a time. Adjust seasoning with salt, if needed. Garnish with fresh parsley before serving.
