Creamy Cajun shrimp Alfredo with a perfect kick, bursting with flavor and ready in 30 minutes.
Ingredients:
  • 16 ounces uncooked fettucine pasta
  • 2 tablespoons olive oil
  • 1 pound medium peeled, deveined raw shrimp
  • 2 teaspoons Cajun seasoning
  • 1 cup finely chopped yellow onion (from 1 onion)
  • ½ cup finely chopped celery (from 1 stalk)
  • 2 garlic cloves, minced
  • cup chicken stock
  • 1 cup heavy cream
  • 4 ounces Parmesan cheese, grated (about 1 cup)
  • 1 teaspoon coarsely ground pepper
  • 1 teaspoon kosher salt
  • ¼ teaspoon cayenne pepper
  • cup sliced scallions, for garnish
Instructions:
  • Prepare the pasta: Cook the pasta as instructed on the package. Drain and keep aside.
  • Season the shrimp: Combine shrimp and Cajun seasoning in a bowl, ensuring even coating. Heat oil in a skillet over medium-high heat. Add shrimp and cook until opaque, approximately 2 minutes on each side. Plate the shrimp.
  • Create the sauce: Sauté the onion, celery, and garlic in the skillet until the onion is tender, about 3 minutes. Pour in the chicken stock to deglaze the skillet. Mix in the heavy cream, Parmesan, pepper, salt, and cayenne. Simmer until thickened, about 4 to 5 minutes, stirring occasionally.
