Quick Cajun shrimp and sausage pasta bake with andouille sausage and shrimp in a creamy Cajun Alfredo sauce.
Ingredients:
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 2 cloves minced garlic
  • 1 tablespoon cajun seasoning
  • 1/2 cup 2% milk
  • 1/2 cup half and half
  • 1/2 cup reserved pasta water
  • 4 ounces alouette garlic and herb cheese
  • 1 cup grated Parmesan cheese
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C), grease a 9x13-inch casserole dish, and bring a pot of lightly salted water to a boil.
  • Melt 1 tablespoon of butter in a heavy skillet until sizzling. Sauté onion and bell pepper until tender, around 3 to 5 minutes. Add sausage and shrimp, then remove from heat. Let the skillet work its magic and finish cooking with residual heat. Enjoy the savory flavors after a brief rest.
  • Add penne to the pot of vigorously boiling water. Continue to cook the pasta uncovered, stirring occasionally, for 6 minutes.
  • Carefully transfer half of the cooked pasta from the pot to the skillet using a slotted spoon. Then transfer the rest of the pasta to the casserole dish. Remember to set aside 1/2 cup of the pasta water.
  • In a saucepan over medium heat, melt 1 tablespoon of butter. Whisk in flour, then add garlic and Cajun seasoning. Slowly pour in milk, half and half, and reserved pasta water while whisking constantly until the sauce is smooth and bubbly, about 2 to 3 minutes. Stir in Parmesan cheese and let it melt for an additional 1 to 2 minutes.
  • Drizzle half of the sauce over the pasta in the casserole dish. Add the sausage mixture to the same dish and carefully mix everything with a spoon. Pour the rest of the sauce over the pasta and cover the casserole with foil.
  • Cook in the preheated oven until hot and bubbly, approximately 25 minutes. Serve promptly.
