Indulgent Cajun shrimp and sausage pasta, reminiscent of gumbo. Perfect with crusty bread and a side salad.
Ingredients:
  • 1/2 cup cream
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 medium onion, chopped
  • 1 cup chopped celery
  • 2/3 cup chopped red bell pepper
  • 2/3 cup chopped green bell pepper
  • 2 teaspoons Cajun seasoning
  • 1/2 cup chicken broth
  • 1/2 pound thinly-sliced, fully-cooked smoked sausage
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon ground black pepper
  • Salt, to taste, see Note
  • 1/2 pound raw shrimp, peeled, deveined, see Note
  • 12 ounces spaghetti, cooked
  • Fresh parsley for optional garnish
  • Lemon slices for optional garnish
Instructions:
  • In a large, heavy saucepan over medium heat, melt butter until foamy, about 2 minutes. Add flour to the foamy butter, whisk quickly until no lumps remain. Keep stirring until the roux becomes a dark, reddish brown color, approximately 5 minutes.
  • Sauté onion, celery, bell peppers, and garlic until veggies start to soften, approximately 5 minutes.
  • Combine Cajun seasoning and chicken broth in the pot and bring the mixture to a boil before adding sliced smoked sausage. Season with red pepper flakes, black pepper, and salt to your liking. Cover the pot, reduce the heat to low, and simmer for about 10 minutes.
  • Uncover the pot, raise the heat to medium-high to bring to a boil. Add in the shrimp and cream, then cook until the shrimp turn pink and curl into a C-shape, approximately 3 minutes.
  • Drizzle the warm sauce over cooked spaghetti and top with fresh parsley and lemon slices for a vibrant finishing touch.
