Spicy Cajun shrimp with shallots, mushrooms, and red peppers in a creamy white sauce over fettuccini.
Ingredients:
  • 1 pound fresh shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 6 ounces fettuccini pasta
  • 3 cups fresh mushrooms, sliced
  • 1 tablespoon chopped shallots
  • 0.66666668653488 cup chicken broth
  • 0.5 cup sour cream
  • 1 cup chicken broth
  • 1 (7 ounce) jar roasted red bell peppers
  • 1 tablespoon drained capers
Instructions:
  • In a medium bowl, mix together peeled shrimp, oil, and Cajun seasoning, and let the flavors meld.
  • Bring a generously salted pot of water to a boil. Cook pasta until al dente, about 8 to 10 minutes, then drain.
  • Melt butter in a large frying pan over medium heat. Sauté mushrooms and shallot until tender, then set aside. Cook shrimp until pink, around 2-3 minutes, then remove from pan. Pour in 2/3 cup chicken broth and boil until reduced to 1/4 cup, about 2-3 minutes.
  • Combine sour cream and cornstarch in a small bowl, then add 1 cup of chicken broth and mix well. Pour this mixture into the reduced chicken broth in the frying pan. Cook until thick and bubbly, then add the shrimp, mushrooms, roasted red peppers, and capers. Heat everything through, season to taste, and serve over pasta.
