Grilled blackened shrimp tacos with fresh pineapple salsa - a vibrant and flavorful taste of summer.
Ingredients:
  • 2 tablespoons smoked paprika
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic salt
  • 1 teaspoon black pepper
Instructions:
  • Preheat the outdoor grill to medium-high heat and lightly oil the grate. Mix paprika, onion powder, oregano, cayenne pepper, garlic salt, and black pepper in a small bowl; set aside.
  • Slice the pineapple lengthwise into wedges. Grill for 4 to 5 minutes on each side. Chop the grilled pineapple and mix in a bowl with red onions, cilantro, fresh lime juice, and salt.
  • Skewer the shrimp, then brush them with melted butter and coat with seasoning mix. Grill until bright pink and opaque, about 3 minutes each side.
  • Grill tortillas until lightly charred, about 20 to 30 seconds per side.
  • Arrange the shrimp on each tortilla and generously spoon over the flavorful pineapple mixture.
