Quick and easy blackened shrimp tacos with tangy coleslaw topping - perfect for a family-friendly weeknight dinner. Accompany with rice and beans.
Ingredients:
  • 1 (14 ounce) bag classic coleslaw mix
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeno, seeded and minced
  • 2 limes, juiced
  • 1 tablespoon olive oil
  • 1/8 teaspoon cayenne pepper
  • 1 pound large raw shrimp, peeled and deveined
  • 1 1/2 teaspoon blackened seasoning
  • 1 1/2 teaspoon olive oil
  • 12 flour tortillas, warmed
  • 8 ounces prepared guacamole
Instructions:
  • Combine coleslaw mix, red onion, cilantro, jalapeno, lime juice, 1 tablespoon olive oil, salt, and cayenne pepper in a large bowl, mixing until well blended. Let it sit for a moment.
  • Combine shrimp, blackened seasoning, and the remaining 1 1/2 teaspoons of olive oil in a separate bowl. Mix well until fully incorporated.
  • In a hot skillet, cook the shrimp mixture for about 6 minutes until shrimp turn bright pink on the outside and the meat is opaque, remembering to stir halfway through.
  • Spread the coleslaw and shrimp evenly onto the tortillas. Finish by adding a generous spoonful of creamy guacamole on top of each taco.
