Delicious blackened shrimp tacos with zesty red cabbage slaw for a quick and flavorful spring or summer meal!
Ingredients:
  • For the shrimp tacos
  • 2 pounds extra-large shrimp (26-30 count), cleaned, shelled, and deveined
  • 2 teaspoons blackened seasoning
  • 1/2 teaspoon salt, if needed
  • 8 corn or flour tortillas
  • For the cabbage slaw
  • 2 cups thinly sliced red cabbage
  • 1/4 cup mayonnaise
  • 1/2 tablespoon granulated sugar
  • 1/4 teaspoon black pepper
  • 1/2 tablespoon white vinegar
  • 1 tablespoon vegetable oil, avocado oil, or grapeseed oil
  • For serving
  • 1/2 cup crumbled Mexican queso fresco
  • 1/2 cup chopped cilantro
  • Lime wedges
Instructions:
  • Preheat your oven to 300°F, then wrap the tortillas in foil and place them on a baking sheet or pan.
  • Enhance the shrimp's flavor: Mix the shrimp with blackening seasoning and salt in a large bowl.
  • Heat the tortillas: Simply bake the tortillas wrapped in foil until warmed through, approximately 10 minutes. If they are ready before the slaw and shrimp are prepared, turn off the oven and keep the tortillas inside to maintain warmth until assembly.
  • Prepare the cabbage slaw by tossing together cabbage, mayo, sugar, black pepper, and white vinegar in a large bowl.
  • Sauté the shrimp: Heat oil in a large nonstick skillet over medium-high heat. Add shrimp and cook until lightly browned and pink throughout, flipping once, about 2 to 3 minutes per side.
  • Create your shrimp tacos: Arrange the tortillas on a platter or individual plates, then distribute the shrimp and slaw evenly among them.
  • Enhance and present: Sprinkle with cheese and cilantro for an extra burst of flavor. Accompany with lime wedges for a refreshing touch. Serve and enjoy.
