Turn winter greens into a luscious pasta sauce in minutes. Simple yet incredibly delicious.
Ingredients:
  • 4 cloves of garlic
  • 200 g cavolo nero
  • 30 g ricotta cheese
Instructions:
  • Boil the pasta in salted water as per the package instructions. While the pasta cooks, peel the garlic and remove cavolo stems. Add leaves and garlic to the pasta, cook for 5 minutes. Grate Parmesan into a blender, add olive oil. Transfer cavolo and garlic to the blender, blend until smooth. Season with salt and pepper. Drain pasta, save some cooking water. Toss pasta with green sauce, adding some cooking water if needed. Serve on plates, top with ricotta, olive oil, and enjoy.
