Try this irresistible super greens turmeric frittata bursting with summer flavors - quick, easy, and delicious!
Ingredients:
  • 180g kale, stems removed and roughly chopped
  • 280g baby spinach
  • 6 large eggs
  • 1 tsp turmeric powder
  • 20.00 ml black or white chia seeds
  • Salt and pepper to taste
  • 150g Cheese Baking Blend
  • 70g Crumbled Fetta with Mediterranean Herbs
  • 15g pepita seeds
  • 15g sunflower seeds
  • 5g toasted sesame seeds
  • Handful fresh baby greens
Instructions:
  • Preheat your oven to 180°C.
  • Quickly boil the kale and spinach for 1 to 2 minutes, then transfer to ice water to preserve their vibrant color. Once cool, thoroughly squeeze out any excess liquid from the greens.
  • In a large bowl, whisk together eggs, cream, turmeric, chia seeds, and seasonings until well combined. Gently fold in greens, 100g of Mil Lel Baking Blend, and Mil Lel Crumbled Fetta with Mediterranean Herbs to mix.
  • Grease a 24cm x 3cm deep tart tin with oil and place a sheet of baking paper at the bottom. Spread the greens mix in the tin and sprinkle the top with the remaining 50g of Mil Lel Baking Blend. Bake for 25 minutes or until firm.
  • Carefully lift the frittata out of the tin, discard the baking paper, and transfer it to a serving platter. Top with seeds and baby greens. Enjoy hot or cold.
