Kid-friendly veggie bacon and cheese slice for a quick, delicious meal.
Ingredients:
  • 2 zucchini, coarsely grated
  • 1 carrot, peeled, coarsely grated
  • 1 small red capsicum, seeded, finely chopped
  • 175g short cut bacon, finely chopped
  • 120g tasty cheese
  • 150g self-raising flour
  • 4 Free Range Eggs, lightly whisked
  • 60ml milk
  • Mixed salad leaves, to serve
Instructions:
  • Preheat your oven to 180C. Grease a 20cm x 30cm lamington pan and line the base and two long sides with baking paper for easy removal later.
  • Combine zucchini, carrot, capsicum, spring onion, bacon, cheese, and flour in a large bowl. Mix well. Add the egg, milk, and oil. Stir until everything is well combined. Season with salt and pepper to taste.
  • Transfer the mixture into the prepared pan, leveling the surface. Bake for 40 minutes or until the top is firm. Allow it to cool, then cut into squares and enjoy with mixed salad leaves.
