Cheesy zucchini slice is a delicious and versatile dish, ideal for a portable lunch option.
Ingredients:
  • Olive oil, to grease
  • 1 bacon rasher, rind removed, finely chopped
  • 4 medium (about 500g) zucchini, coarsely grated
  • 5 eggs, lightly whisked
  • 80g (1 cup) coarsely grated vintage cheddar
  • 36.40 gm extra virgin olive oil
Instructions:
  • Preheat the oven to 180°C and generously brush a 26 x 16cm pan with oil. Line the base and two long sides with non-stick baking paper, leaving extra paper to hang over the edges.
  • In a non-stick frying pan over medium-high heat, sizzle up the bacon for 2-3 minutes until crisp. Pop it into a large bowl. Saute the zucchini in the same pan for 5 minutes until soft. Transfer it to the bowl with the bacon and let it cool down.
  • Combine eggs, sharp cheddar cheese, and oil with the zucchini mixture, then gently sift in the flour. Season generously with salt and pepper, mixing thoroughly until fully incorporated.
  • Pour the mixture into the pan. Bake until golden and set, about 30 minutes.
