Bacon mac and cheese zucchini slice

Cheesy zucchini casserole: a comforting and tasty dish for the whole family.
Ingredients:
  • 250g macaroni
  • 125.00 ml frozen peas
  • 9.20 gm extra virgin olive oil
  • 3 middle bacon rashers, trimmed, finely chopped
  • 40g butter
  • 62.50 ml plain flour
  • 450.63 gm milk
  • 2 large zucchini, grated
  • 62.50 ml grated parmesan
  • 125.00 ml grated tasty cheese
  • 1 egg, lightly beaten
  • 62.50 ml fresh basil leaves
  • Mixed salad, to serve
Instructions:
  • Heat your oven to 220C/200C fan-forced and lightly grease a medium baking dish.
  • Boil pasta in a large pot of salted water until perfectly cooked, then toss in peas during the final minute. Drain well.
  • Heat oil in a medium frying pan over medium-high heat. Cook bacon until crisp, stirring occasionally for about 5 minutes. Drain on paper towel.
  • In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute until it bubbles. Take off the heat. Slowly pour in milk, stirring until smooth. Return to heat and cook until thickened. Mix in parmesan and 1/4 cup tasty cheese until smooth. Stir in egg.
  • Mix the pasta mixture, white sauce, zucchini, and half of the bacon in a large bowl. Season to taste. Spoon the mixture into the prepared dish. Sprinkle the remaining tasty cheese on top. Bake for 15 to 20 minutes until the cheese is golden. Let it rest for 15 minutes, then garnish with the remaining bacon and basil. Serve alongside a salad.
