Elevate classic mac and cheese with crispy bacon and crunchy breadcrumbs.
Ingredients:
  • 375g macaroni
  • 60g butter
  • 50g plain flour
  • 11.80 gm Dijon mustard
  • 625g milk
  • 120g cheddar cheese
  • 4 rashers Made Thin Sliced Streaky Bacon, finely chopped
  • 2 spring onions, thinly sliced
  • 35g breadcrumbs
  • 40g parmesan
Instructions:
  • Preheat your oven to 180°C. Boil the macaroni in a large saucepan until al dente following the instructions on the packet. Drain thoroughly.
  • In a large saucepan over medium heat, melt the butter. Add flour and mustard and cook for 2 minutes until the mixture bubbles and becomes grainy. Reduce heat to low. Gradually stir in the milk and continue stirring for 5 minutes until the sauce boils and thickens. Remove from heat and stir in the cheddar. Season to taste.
  • Cook bacon in a frying pan over medium heat for 5 minutes or until golden brown while the macaroni is cooking.
  • Mix the macaroni, bacon, and spring onion with the sauce and transfer to a 10-cup (2.5L) ovenproof dish. Combine breadcrumbs and parmesan in a bowl, then sprinkle over the macaroni mixture. Spray with olive oil and bake for 15 minutes or until golden brown.
