Elevated mac and cheese with bow-tie pasta, crispy bacon, and vibrant spinach serves six in 25 minutes.
Ingredients:
  • 3 cups uncooked bow-tie (farfalle) pasta (8 oz)
  • 1/2 lb sliced bacon, coarsely chopped
  • 2 tablespoons butter
  • 1 small clove garlic, finely chopped
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups milk
  • 2 cups shredded sharp Cheddar cheese (8 oz)
  • 1 bag (6 oz) fresh baby spinach leaves, coarsely chopped
Instructions:
  • Cook the pasta in a 5-quart Dutch oven according to package instructions. Drain the pasta and return to the Dutch oven, covering it to keep warm.
  • In a 10-inch skillet, crisp up the bacon over medium heat for 5 to 8 minutes with occasional stirring until it's nice and crisp. Then, transfer the bacon to paper towels and save 2 tablespoons of the drippings.
  • In a 3-quart saucepan, melt butter and bacon drippings over medium heat. Add garlic and cook for 30 seconds until fragrant. Whisk in flour, salt, and pepper until smooth. Pour in milk and bring to a boil. Add cheese and stir until melted and sauce is smooth.
  • Drizzle creamy cheese sauce over pasta and mix well. Add spinach and stir. Set aside 1/4 cup of bacon; mix the rest into the pasta. Serve pasta in 6 bowls and top with the reserved bacon for an extra crunch.
