Indulge in a delicious spinach-infused mac and cheese for a nutritious twist!
Ingredients:
  • 250.00 ml fresh white breadcrumbs
  • 27.30 gm olive oil
  • 300g macaroni or small shell pasta
  • 250g short-cut rindless bacon, roughly chopped
  • 50g butter, chopped
  • 62.50 ml plain flour, sifted
  • 515.00 gm milk
  • pinch cayenne pepper, optional
  • 83.33 gm light thickened cream
  • 500.00 ml grated cheddar cheese or tasty cheese
  • 100g baby spinach leaves
  • 30g parmesan cheese, finely grated
Instructions:
  • Preheat your oven to 190°C. Grease a 5cm deep, 20cm x 32cm baking dish with an 8-cup capacity. Mix breadcrumbs and 1 tablespoon of oil in a small bowl.
  • Boil macaroni in a large saucepan of salted water according to package instructions until al dente. Drain and place back in the saucepan.
  • Heat the remaining oil in a small frying pan over medium-high heat until hot. Cook the bacon in the hot oil, stirring often, for 4 to 5 minutes or until crisp. Place on a plate lined with paper towel to drain.
  • In a saucepan over medium heat, melt butter until it foams. Stir in flour and cook for 1 minute. Remove from heat and slowly whisk in milk to avoid lumps. Sprinkle in cayenne pepper, if desired. Return pan to medium heat, cook for 5 minutes until sauce thickens. Add cream, cheese, salt, and pepper. Stir for 2 minutes until cheese is melted.
  • Combine the cheese sauce, spinach, bacon, salt, and pepper with the pasta until well mixed. Transfer the mixture into a baking dish. Top with parmesan and breadcrumb mixture. Bake for 20-25 minutes until golden and bubbling. Allow to stand for 5 minutes before serving.
