BLT Mac and Cheese

Creamy macaroni and cheese with crispy bacon, fresh spinach, and juicy tomatoes - a modern twist on a classic favorite!
Ingredients:
  • 1 loaf (32 oz. box) VELVEETA™ Original Cheese, cut into large cubes
  • 1/4 cup butter
  • 4 cups whole milk
  • 1 package (16 oz) elbow macaroni
  • 2 cups shredded sharp Cheddar cheese (8 oz)
  • 2 cups small cherry tomatoes
  • 1 bag (9 oz) fresh spinach
  • 1 lb bacon, crisply cooked, crumbled
  • 1 cup Progresso™ plain or Italian-style panko crispy bread crumbs
Instructions:
  • Place cheese cubes, butter, and milk in a large microwave-safe bowl. Microwave on High for 8 to 10 minutes. Stir with a whisk, then microwave for an additional 4 minutes. Continue to microwave and stir until cheese is completely melted and mixture is smooth, for a total of about 15 minutes.
  • Preheat oven to 350°F. Boil macaroni in salted water for 3 minutes less than box instructions recommend until firm. Drain and transfer to a 15x10-inch (4-quart) glass baking dish. Pour in melted cheese sauce and mix thoroughly. Add shredded cheese, tomatoes, and spinach, and stir to combine.
  • Cover the dish to lock in the flavors while baking for 30 minutes. Uncover and generously sprinkle bacon and bread crumbs to create a crispy, golden-brown topping. Bake for an additional 5 minutes until perfectly browned. Allow to cool for at least 10 minutes before serving to fully enjoy the delicious flavors.
