Spinach and bacon filo quiche

Indulge in a savory spinach and bacon quiche with flaky filo pastry.
Ingredients:
  • 2 rashers Don Middle Bacon, rind removed, finely chopped
  • 8 sheets Filo Pastry, thawed
  • 50g Butter, melted
  • 6 extra-large Free Range Eggs, lightly whisked
  • 60g tasty cheese
  • 125ml thickened cream
  • 250g pkt frozen Chopped Spinach, thawed, squeezed of excess liquid
Instructions:
  • Preheat your oven to 180C. Heat a non-stick frying pan over medium heat. Cook the bacon, stirring occasionally, for 5 minutes until it is crispy. Transfer the cooked bacon to a plate.
  • Prepare a 20cm pie dish by greasing it. Lay out the filo sheets on a clean surface. Brush each filo sheet with a touch of butter, then fold in half widthwise. Arrange the folded filo sheets in the dish, ensuring they overlap slightly to cover the entire dish.
  • Combine eggs, cheddar, and cream in a jug, whisk well and season. Layer three-quarters of the bacon and spinach over the filo pastry. Pour the egg mixture over the top and then add the remaining bacon and spinach. Bake until golden brown and set, about 30 minutes. Allow it to cool slightly before cutting into wedges to serve.
