Delicious spinach and bacon bake, perfect with a fresh salad.
Ingredients:
  • 1 brown onion, grated
  • 5 rashers rindless bacon, chopped
  • 1/2 bunch English spinach leaves, shredded
  • 375.00 gm self-raising flour
  • 321.88 gm milk
  • 75.08 gm extra-light olive oil
Instructions:
  • Preheat your oven to 200°C and lightly grease a 12-cup muffin tray.
  • 1. Heat olive oil in a frying pan on medium heat, then add onion and bacon. Sauté for 3 minutes until onions are soft. Add spinach, then remove from heat. Let sit for 2 minutes until the spinach wilts. Cool before serving.
  • Start by sieving the flour into a bowl. In a separate jug, mix the egg, milk, and extra-light oil thoroughly. Pour this mixture into the flour, combining gently until nearly mixed. Next, gently fold in the bacon and cheese mixture. Finally, spoon the batter into muffin holes, filling them three-quarters of the way full.
  • Bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean. Enjoy warm.
