Cheesy omelet muffins with spinach, onion, and bacon - simple, flavorful, and perfect for meal prep.
Ingredients:
  • cooking spray
  • 1 pound bacon
  • 1 onion, chopped
  • 10 eggs, or more to taste
  • 0.25 cup milk
  • 1 (6 ounce) package fresh spinach, chopped
  • 1 (8 ounce) package shredded Colby Jack cheese
  • 1 tablespoon hot pepper sauce
  • 1 teaspoon Italian seasoning
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 350°F. Lightly grease 2 muffin tins and line a baking sheet with aluminum foil.
  • Arrange bacon strips in a single layer on a baking sheet and bake in a preheated oven until golden and crispy, approximately 30 minutes. Set aside bacon grease, then drain the cooked bacon on paper towels and chop into small pieces.
  • Pour the bacon grease into a skillet. Sauté the onion in the skillet over medium heat until it turns transparent. Then, drain the onion on paper towels.
  • In a bowl, combine eggs and milk, then mix in bacon, onion, spinach, Colby Jack cheese, hot pepper sauce, Italian seasoning, salt, and pepper. Using an ice cream scoop, fill muffin pans with the mixture, filling cups 3/4 full.
  • Bake in the preheated oven for about 50 minutes, or until the edges of the muffins are golden and slightly crispy.
