Delicious fusion omelet with rice and veggies!
Ingredients:
  • 6 eggs
  • 1/2 teaspoon pepper
  • 1 teaspoon vegetable oil
  • 1 cup brown or white rice
  • 1 tablespoon finely chopped carrot
  • 1 tablespoon finely chopped green bell pepper
  • 1 tablespoon finely chopped red bell pepper
  • 1 tablespoon finely chopped green onion
  • 1 tablespoon finely chopped mushrooms
  • 1 garlic clove, finely chopped
  • 1 tablespoon soy sauce
Instructions:
  • lightly whisk eggs, milk, and pepper; let it sit. Heat oil in a nonstick skillet over medium-high heat. Sauté remaining ingredients (excluding soy sauce) in the oil until vegetables are just tender-crisp. Mix in soy sauce. Take mixture out of the skillet and keep it warm.
  • Spritz the skillet with cooking spray and heat over medium-high heat. Pour in 1/2 cup of the egg mixture, then swiftly move the skillet while stirring to evenly spread and slightly brown the omelet's bottom. Be careful not to overcook, as the omelet will keep cooking after folding.
  • Place a generous 1/4 cup of the rice mixture onto one side of the omelet. Gently slide a spatula under the unfilled side of the omelet and fold it over the rice mixture. Carefully tilt the skillet to transfer the omelet onto a plate. Repeat the process with the remaining egg and rice mixtures.
