Spicy Asian omelette bursting with fresh greens.
Ingredients:
  • 50g snow peas, trimmed, thinly sliced
  • 50g beansprouts, trimmed
  • 1 green onion, thinly sliced
  • 1 long red chilli, thinly sliced
  • 1cm piece ginger, finely grated
  • 48.80 gm oyster sauce
  • olive oil cooking spray
Instructions:
  • Place the snow peas in a heatproof bowl and cover them with boiling water. Allow them to sit for 3 minutes, then drain and rinse under cold water.
  • Mix snow peas, bean sprouts, onion, and chili together in a bowl.
  • In a jug, blend together ginger, garlic, oyster sauce, and 1 tablespoon of hot water.
  • Whisk eggs and 2 tablespoons of cold water in a bowl until blended. Add a touch of pepper for seasoning.
  • Preheat a wok over medium-high heat. Lightly coat with oil spray. Pour half of the egg mixture into the wok and swirl to evenly coat. Cook for 30 seconds or until just set. Transfer the omelette to a plate, cover to keep warm, and repeat with the remaining egg mixture.
  • Spread the snow pea mixture on one half of each omelette. Fold the omelette in half to cover the filling, then drizzle with sauce before serving.
