Try this quick and tasty Asian chicken and vegetable omelette for a satisfying and nutritious meal.
Ingredients:
  • 4 eggs
  • 2 tsp Chinese rice wine*(shaohsing)
  • 18.20 gm peanut oil
  • 1/2 barbecued chicken, skin and bones discarded, meat shredded
  • 1/2 small red capsicum, thinly sliced
  • 1 small carrot, cut into matchsticks
  • 25g snow pea
  • 24.40 gm oyster sauce, to serve
Instructions:
  • Combine eggs with wine, whisk until smooth. Heat oil in a wok or large frypan on high heat. Pour in egg mixture and cook, gently pushing the raw parts to the edges. Once nearly cooked (around 1 minute), place chicken and vegetables on one half of the omelette and cook for 1 more minute. Fold the other half over, then transfer to a serving plate. Cut in half and serve hot with a drizzle of oyster sauce.
