Asian-style stuffed tomatoes

Elevate pork mince in vibrant Asian-style stuffed tomatoes.
Ingredients:
  • 6 large vine-ripened tomatoes
  • 6 garlic cloves, crushed
  • 1 small onion, finely chopped
  • 2 tsp grated ginger
  • 25g dried shiitake mushrooms, soaked in hot water for 20 minutes (see note)
  • 350g pork mince
  • 15.00 gm caster sugar
  • 21.00 gm soy sauce
  • 20.00 ml shaohsing rice wine (see note)
  • 1 tsp sesame oil
  • 1 eggwhite
  • 150ml chicken style liquid stock
  • 80ml oyster sauce
Instructions:
  • Prepare the tomatoes by slicing off the tops and setting them aside. Use a small spoon to scoop out the flesh, strain the pulp, and reserve the liquid. Pat the insides of the tomatoes with a paper towel.
  • In a sizzling wok, cook 1 tablespoon of vegetable oil with garlic, onion, and ginger for 1 minute. Remove and let it cool down.
  • Strain mushrooms, discard liquid, and squeeze dry. Finely chop and place in a large bowl with minced meat, 1 teaspoon of sugar, soy sauce, rice wine, sesame oil, and egg white. Thoroughly mix the ingredients and use the mixture to stuff tomatoes. Clean the wok and heat the remaining vegetable oil over medium heat. Place the tomatoes filling-side down and cook for about 5 minutes until golden. Flip the tomatoes, add stock, oyster sauce, remaining sugar, and reserved tomato juice. Reduce heat to low, cover with the tops of tomatoes, and simmer for 15 minutes or until filling is cooked through. Serve with jasmine rice.
