Asian-style chopped salad

Use vibrant summer produce to create a refreshing Asian-inspired chopped salad.
Ingredients:
  • 36.40 gm extra-virgin olive oil
  • 21.00 gm lime juice
  • 1 baby cos lettuce
  • 1 small carrot, peeled, grated
  • 250.00 ml beansprouts, trimmed
  • 62.50 ml fresh mint leaves
  • 62.50 ml fresh coriander leaves
  • 1 long red chilli, chopped
  • 40.00 ml chopped roasted salted peanuts
Instructions:
  • Combine oil, lime juice, salt, and pepper in a screw-top jar. Secure the lid tightly and shake vigorously to mix.
  • Prepare the lettuce by discarding outer leaves and core, then separate and wash the leaves. Gently pat dry using a tea towel and roughly chop. Combine the lettuce with carrot, onion, beansprouts, mint, coriander, and chilli in a bowl. Add dressing and toss together. Finish by sprinkling peanuts on top before serving.
